Goat cheese is a delicious ingredient to use in omelets. It has fewer calories, and less sodium, fat and cholesterol than most cow’s milk cheese. It also contains selenium, which is an antioxidant that can help reduce inflammation. Combined with nutrient-dense spinach, this lung-healthy recipe will help you put your best foot forward.

INGREDIENTS

  • 3 eggs
  • 1 cup spinach
  • 2 tablespoons goat cheese
  • 2 teaspoons olive oil
  • salt and pepper to taste

 

INSTRUCTIONS

    1. Beat eggs in a large bowl with a whisk or fork.
    2. Heat 2 teaspoons of olive oil in an 8-inch pan.
    3. Once oil is heated, pour eggs in the 8-inch pan.
    4. Gently push cooked portions from edges and allow the uncooked eggs to reach the pan’s surface.
    5. Flip omelet, and add the spinach and goat cheese.
    6. Fold omelet closed and serve on plate immediately.
