We’ve all heard that breakfast is the most important meal of the day, but having chronic obstructive pulmonary disease (COPD) may have you looking for breakfast options that benefit your lungs. I’m Russell Winwood, the COPD Athlete, and one area of my own COPD treatment that I like to focus on is my diet. Each day starts with breakfast, and 2 breakfast options that I love from the Anti-Inflammatory Initiative plans from Lung Health Institute. 

1. Fried Eggs and Avocado

One thing I’ve learned is helpful for my lungs is eating a specific type of diet. For me, I find my lungs function best when I’m eating a high-fat, moderate protein and low-carb diet. The high healthy fat content is one reason I love the fried eggs and avocado recipe from the Anti-Inflammatory Initiative plans. The recipe offers you tons of healthy fats from the eggs, olive oil and avocado it uses, and you’ll also get a good amount of immune system-boosting vitamins and minerals, such as:

The combination of healthy fats and other lung-healthy nutrients in this recipe is one of my favorite ways to start my morning. 

2. Kale and Bacon Frittata

When I want to switch things up at breakfast time, I turn to another of my favorite Anti-Inflammatory Initiative recipes: a recipe for a delicious kale and bacon frittata. If you’ve never had a frittata, it’s basically a baked omelet, and this particular recipe combines lung-healthy ingredients with fantastic flavors. With eggs, kale, bacon, parmesan cheese and butter all included in this dish, you’ll be getting a really high amount of healthy fat and protein. These nutritional building blocks can help boost your energy in the morning. However, possibly the best part of this meal is that you get something really tasty that only has 2 grams of carbs per serving.
